The gold price moved between the quote and the cast. Where does that show up?
On the piece. The cost carried on the order is what you expected to pay; when the metal is bought, that figure is replaced with what it cost and the order's margin moves with it. The price the customer agreed does not change — which is the point of seeing it: the next quote is written knowing what the last one really left you.
How much deposit should a commission carry?
Enough to cover what you have to buy before the balance arrives, which for a piece with a stone in it is usually most of the materials. People land on 50–60%, and the reason is not psychology: the deposit is spent in the first week and cannot also be the profit.
Can the customer see where their commission is without messaging me?
Yes. Every commission has a page they can open with a link: the deposit paid, the balance owed, the expected date, and your payment details for the rest. The same record you are working from, so it does not go stale while you are at the bench.
